How to cook pork belly chunks successfully without burning?

Hello! We are Shuhaskaria Kibon Asakusa Honten, a restaurant specializing in churrasco and Brazilian cuisine located in Asakusa, one of Tokyo's most popular sightseeing spots, a 3-minute walk from Asakusa Station on the TX line.

We are preparing for a new release of BBQ set, this time also introducing pork belly... ♪
The photo shows a sliced pork belly block grilled over a distant charcoal fire.
I took it home to test it out to see how much effort it would take to actually grill it on the BBQ.
It took about an hour and a half to finish this process of turning and baking.
It is a blissful time for BBQ lovers to grill silently in front of the burning coals, although it is hard to take your eyes off of them even for a moment.
When cut, there is still a reddish color in the center, but this is what happens after baking in the oven for a long time.
So after slicing, quickly sear it and serve it over a fire!

If you think you can't be bothered with pork all the time (most people do), once the surface of the block is well browned, remove it from the stove, wrap it in aluminum foil, and put it back on the stove again.
I think it is fine on the side.
Now you can work on other BBQs without worrying about getting burnt.

Once you've had your fill of BBQ, open the aluminum foil...
There should be a pork belly sitting there, burned without being burnt.

After removal, slice and sear as shown in the photo!
Personally, I recommend eating it between bread.
The bread is decidedly not the squishy, sweet hot dog type, but French bread with a hint of saltiness!
